Sponge Guard (Tori) Sabji





  1. Heat some mustard oil in a pressure cooker enough to fry the chopped onions. Let the oil heat until it start releasing smoke.
  2. Add a pinch of cumin seeds. Stir for two seconds and then add grated garlic. Fry for 30 seconds. The add one chopped onion and fry for 2 minutes while stirring ocassionally. Then add grated ginger and fry for few seconds. Add salt according to taste and half spoon turmeric.
  3. Add chopped cubes of sponge guard (tori). Mix and let it cook for some time. Close the lid of the pressure cooker and cook for two whistles on full heat. Do not release the pressure.
  4. Add one table spoon of garam masala powder and a pinch of cracked black pepper , in the end , after cooking.
  5. Garnish with fresh green conriander and serve.
