1. Heat 2 spoon full of olive oil or ghee.
  2. Add cumin seeds and garlic paste or chopped and fry for not more than half half minute.
  3. Now add chopped onions and cook them for a couple of minutes. Add some salt and then again cook it for few more minutes until onions turn light brown in colour.
  4. Now add one spoon ginger paste or chopped ginger. Fry that for less than half minute.
  5. Now add chopped tomatoes. This step is different for two types of vegetable curries. For vegetable curriess with gravy you can cook tomatoes for about 5 minutes but for the dry variety you will have to cook tomatoes more so that the whole masala becomes quite dry.
  6. Now add all the spices according to the quantity of the vegetables and your taste. For example, Half table spoon of each: salt, turmeric, green chilli,
  7. Go to different recipes and cook according to that because this is where you add different vegetables.
  8. And after cooking the vegetables you add one table spoon of coriander powder in the end
